Tomato couscous served with fruit and avocado slices
For something a bit more substanial for lunch to get them through the rest of the day or sleeping soundly for a nap!
1 Tbsp mixed Italian herbs
3 Tbsp tomato paste (1.5 cups)
1/2 cup of grated strong cheddar cheese
2 x tbsp of Greek yogurt
Water to thin to desired consistency
1/2 cup dried couscous
1 x carrot (steamed)
Heat Greek yogurt and tomato paste until hot, add in cheese and herbs
Once cheese have melted add water (or more yogurt) to change consistency.
Cook couscous as directed and add to tomato sauce.
Finally throwing in chopped up steamed carrot.
